This eggless banana bread recipe should not miss from your recipe book because it is very fulfilling, delicious, naturally sweetened and it only takes ten minutes to gather the ingredients together. 

Just like any other banana bread, this one can be enjoyed with the morning coffee or a cup of tea.

It is also suitable for dessert or a snack. The banana bread without eggs can be packed for a hike to give you a bit of energy when tired.

A Brief History of Bananas... Did you know?

The first credit for promoting the cultivation of bananas is given to Antonio Musa, the personal physician of the Roman Emperor Octavius Augustus. This happened from 63 to 14 B.C.

Bananas were brought to Europe from West Africa by Portuguese sailors in the beginning of the fifteenth century. The Guinean name was “banema” which became “banana”.

You need to know that the original bananas have been cultivated since ancient times, even before rice. Although the banana consumption bloomed in Africa, it seems to have its origins in Oceania and East Asia.

The Spanish missionary, Friar Tomas de Berlanga, carried bananas to America after the fruit accompanied the sailors to Canary Islands and West Indies.

Yet, these bananas from history are not the ones we eat today and use for our banana bread without eggs. These notes are referring to the green or red cooking variety, also known as plantains so they are distinguished from the sweet type.

The delicious yellow banana was first discovered by Jean Francois Poujot, in Jamaica, 1836, on his plantation. We may say that this is a mutant strain of plantain. The farmer tasted it and noticed its sweetness as opposed to the fade taste of the cooking type. This new variety didn’t need to be cooked prior to eating. He began to cultivate this new type of banana.

Pretty soon, these bananas reached from the Caribbean to Boston, New Orleans and New York. They were considered an exquisite treat and were served on a plate. A knife and fork were necessary in order to delicately enjoy them. One could buy sweet bananas with ten cents each in 1876, at the Philadelphia Centennial Exposition.

Nowadays, bananas are extensively used for baking and are the main ingredient for the delicious banana bread no eggs.

You may ask me why to make the recipe without eggs.

The first thing that comes into my mind is that I wanted to try something new and see what comes out without this great binder. As you probably know, egg is a gold mine for baking because it keeps ingredients together and gives a nice and fluffy texture.

However, you should know that you can easily make goodies without eggs too. 

Why Eggless Cookies

One of the other reasons you don’t want to increase the egg consumption is that there is an entire debate over its health benefits. Some new studies show that eggs could be something close to the “perfect food”.

Christopher Blesso is an associate professor of nutritional science at the University of Connecticut. 

He argues that the eggs are very nutrient dense since they are meant to help an organism grow. Other older researches state that the fat content in eggs is extremely high, about 60%. Much of this is saturated fat and this could be a problem for heart health.

Also, there is some evidence that a diet high in fat can lead to insulin resistance which increases the risk of diabetes.

So, if you want to limit the egg consumption, you may definitely go for these no egg banana bread.

And the final reason for not using eggs is that there are a lot of people who have egg intolerance or are even allergic to them.


What is the Difference Between Egg Allergy and Egg Intolerance?

If you are having a food intolerance, your body will have an adverse response in case you eat that particular food. This reaction is not life-threatening. It often translates into gastrointestinal bother such diarrhea or abdominal bloating. 

But you may also suffer from nausea or vomiting, a sense of fogginess or headaches

The reaction can occur after a few hours after you eat eggs or even a few days later. This intolerance can last for a couple of years or even for the entire life

In case of eggs, people may be sensitive to egg whites, yolks or even both. It is also possible to have multiple food intolerance. 

Most common are the ones to gluten and dairy.

Allergies are something more serious and are caused by an immune reaction, in this case to egg protein. Unfortunately, eggs are known to be one of the most common foods that cause allergy for children.

The allergy symptoms may occur in a few minutes or even in a few hours after eating eggs or various dishes containing eggs.

The allergy reactions are very different from person to person and also their intensity varies. They can be mild but also severe and you will need to ask for professional help.

Most common allergy reactions are:

  • Skin rashes, inflammation or hives – this is the most common reaction.
  • Runny nose, nasal congestion and sneezing – these symptoms are attributed to allergic rhinitis.
  • Digestion upset, like nausea, cramps and vomiting.
  • Asthma symptoms, like wheezing, coughing, shortness of breath or chest tightness.

In rare cases, egg allergy can produce a life-threatening reaction which is called anaphylaxis. If the following signs appear, you must go to the emergency room immediately:

  • Swollen throat or difficulty in breathing due to constriction of airways.
  • Rapid pulse.
  • Abdominal cramping and pain.
  • Dizziness, lightheadness or even loss of consciousness due to a severe drop of blood pressure.

This harsh allergy reaction needs to be treated in a hospital with an epinephrine (adrenaline) shot.

I must confess that I am not allergic or intolerant to eggs, nor my kids are. In fact, no one in our family is. And I am extremely grateful for that. I chose to make this vegan banana bread without using eggs just to see what comes out.

The result was spectacular.

So if you are suffering from some of the above ailments, rest assured that you can cook some delicious cakes.

However, baking vegan goodies is not something new although veganism is gaining more and more followers. But you should know that even during the WWII, home cooks were making these desserts because the ingredients were more affordable.

Rationing led to the absence of many foods, like animal products. People had to deal with that by trying to substitute butter, milk and eggs (which were really expensive and hard to find) with vegetable ingredients. 

They had to use vegetable oils, gluten, chemical leaveners, vinegar and salt to create batters and doughs. Even today, these recipes are popular and cost effective.

To replace the eggs, we’ll use ground flax seeds. This is a common ingredient used for vegan recipes, also found in eggless banana bread. By mixing ground flax with water you will get what bakers call flax egg”. 

This mix has exactly the same role as eggs, to bind the ingredients, keep the dough together and give structure to the cake.

The ratio to prepare the perfect flax egg is to add 2.5 tablespoons of water to one tablespoon of ground flax. 

Stir and set aside for about five minutes to thicken. This mix will replace one egg in recipes.

You need to know that it isn’t an exact 1:1 substitution because it doesn’t stiffen just like an egg during baking so be aware of that when you try it for other cakes. You may need to test it in different recipes.

How to Make Eggless Banana Bread?

That being said, I can definitely assure you that this is the best banana bread no eggs you’ve ever tasted.

It is filled with flavor, has a delicate touch of spices and the perfect texture. 

You might imagine that it is very moist due to the bananas, but the moisture is just right. 

The loaf is soft and tender but it also has a well-defined crumb. The best thing about this vegan banana bread is that the recipe is easy to prepare.

It will only take 15 minutes to gather and combine the ingredients. Also everything is mixed up together, you will have to wash just one bowl after making it.

How to Prepare Eggless Banana Bread?

As previously said, you will need a few ingredients which shouldn’t miss from your kitchen in case you want to prepare vegan goodies. We will use:

  • Bananas, of course.
  • Flax egg.
  • Some nut butter, like almond, peanut or cashew.
  • Vegetable oil, like coconut or avocado.
  • Some sweetener – you may use coconut sugar, brown sugar or even cane sugar.
  • Honey, maple syrup or coconut nectar.
  • Almonds – to grind them into almond meal.
  • Gluten-free flour mix.
  • Rolled oats.
  • Baking powder.
  • Vegetable milk – almond, rice, oat, hemp or whatever flavor you prefer.

Gather all the ingredients and prepare a loaf pan. Line it with parchment paper or grease it lightly.

Everything needs to be mixed together. You will get a smooth batter. Transfer it to the previously prepared pan.

How to Make Eggless Banana Walnut Bread?

The recipe is exactly the same, only we will add some chopped walnuts in the end. Besides for the healthy addition of omega-3 fatty acids, walnuts will also bring nice aesthetics to the loaf.

How to Store Eggless Banana Bread?

After cooling completely and eating all you can, you have the option of keeping the banana bread without eggs for about 4-5 days at room temperature if you cover it. The slices can also be frozen for up to one month.

  • 3 pcs ripe bananas
  • 1 tbsp ground flax
  • 2.5 tbsp water
  • 1 ¾ cup ground almonds
  • 1 ¼ cup gluten-free flour blend
  • 1 1/3 cup rolled oats
  • 1 tbsp baking powder
  • 3 tbsp melted coconut oil
  • ¼ cup almond butter
  • ¾ cup almond milk
  • ½ cup brown sugar
  • 2 tbsp honey
  • ½ tsp sea salt
  • ½ cup walnuts, chopped

Instructions

  • Preheat the oven to 350F. Line a loaf pan with parchment paper or grease lightly with a bit of vegetable oil.
  • Mix the ground flax with water in a large mixing bowl and set aside for five minutes to thicken.

  • Add the bananas and mash with a fork or a hand mixer.

  • Add the milk, coconut oil, almond butter, sugar, honey and salt. Whisk well to combine.

  • Stir in the baking powder, ground almonds, gluten-free flour mix and oats. Mix again.

  • Fold in half of the walnuts quantity.
  • Transfer the batter to the prepared pan. If necessary, level the top with the back of a spoon. Add the remaining walnuts on top.

  • Take the pan to the oven and bake for about 60 minutes. Make the toothpick test: insert a toothpick in the center of the loaf. If it comes out clean or with a few crumbs, the banana bread no eggs is already cooked. Otherwise, leave it for 5 to 10 more minutes in the oven.
  • After removing the pan from heat, let the loaf rest for ten minutes. If you lined the pan with parchment paper, use it to pull out the eggless banana bread. In case you greased it, use a knife to loosen the sides and then take it out.
  • Let the loaf cool completely before slicing it.
