- 2 chicken breasts cut into thin slices
- 1 egg beaten
- ½ cup Panko breadcrumbs
- ½ cup corn meal
- ½ teaspoon salt
- ½ teaspoon freshly ground pepper
Preheat the oven to 400°F Line a baking tray with parchment paper.
Place the beaten egg in a bowl.
Mix together the breadcrumbs with corn meal, salt and freshly ground pepper. Spread this mixture on a plate.
Soak the chicken slices into the beaten eggs and then roll into the Panko mixture to coat well. You may use your hands or some tongs.
Transfer all the slices to the baking tray.
Cook for 15-20 minutes. Flip over to cook evenly on the other side too.
The oven fried chicken should be golden-brown on both sides.
Remove from heat and set aside to cool a bit.
Enjoy the breaded chicken with mashed potatoes or a large veggie salad.
