  • 2 chicken breasts cut into thin slices
  • 1 egg beaten
  • ½ cup Panko breadcrumbs
  • ½ cup corn meal
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper


  • Preheat the oven to 400°F Line a baking tray with parchment paper.
  • Place the beaten egg in a bowl.
  • Mix together the breadcrumbs with corn meal, salt and freshly ground pepper. Spread this mixture on a plate.
  • Soak the chicken slices into the beaten eggs and then roll into the Panko mixture to coat well. You may use your hands or some tongs.
  • Transfer all the slices to the baking tray.
  • Cook for 15-20 minutes. Flip over to cook evenly on the other side too.
  • The oven fried chicken should be golden-brown on both sides.
  • Remove from heat and set aside to cool a bit.
  • Enjoy the breaded chicken with mashed potatoes or a large veggie salad.
